I am Lithuanian and in my country almost all traditional dishes contain potatoes. I love potatoes because you can make millions of things out of them and there is almost no way to fail.

One of my most favorite Lithuanian dishes is potato pancakes. They are just so rich in taste, crispy but soft inside, filling and simple! Every time I go to visit my parents I request my mom to make it and last time she made it beautiful golden pancakes so I decided to share the recipe with you – it is too good not to. Keep in mind that it is not only quick, but a cheap dish as well. Let me add, I’ve never met anybody who did not like it. Best served with my raw vegan “cheese” sauce or just plain Greek yogurt.

Time: 20 minutes
Serves: 2 portions
Ingredients:
- 6 Potatoes
- 1 Egg (for vegan version use egg replacer or read the note under the recipe)
- Salt and pepper
- Oil
- 1 Onion (optional)
- 1 tsp Caraway seeds (optional)
1. Grate potatoes with microblade fine grater (you can use a normal grater, but then the texture will be different, just crispy and not that soft inside).
2. Drain it and put one egg into the mixture. Mix it.
3. Add salt, pepper, cumin (optional), finely chopped onion (optional). Mix it well.
4. Heat a pan with a lot of oil. Make sure it is very hot! Put some mixture into the pan and form approx 5 inch wide pancakes. Fry it until golden then flip it. Repeat the process.

5. Lay some paper towels on a plate or a chopping board, once the pancakes are ready and cooked, put it on the towel to get the excess oil out. It’s done! Serve it immediately with raw vegan “cheese” sauce, Greek yogurt or cottage cheese.
Note for vegan version: In case you do not have egg replacer, try draining grated potatoes as much as you can and use onion. I’ve read on some vegan forums that it worked just fine as long as the potatoes were dry and onion somehow made the whole mixture stick. I haven’t tried it myself yet so let me know if it worked for you!

Feel free to improvise and add some more vegetables into it (grated carrots, cabbage and etc) or grated cheese. Keep me updated if your experiments worked!
